Remove outdated GitLab references after server archival #3347
Description
The GitLab server is still referenced in the README and on mcp.so, but it was removed in commit d53d6cc ("Archive unmaintained servers").
-> Remove all references to the archived GitLab server from the README.
-> Update or remove the corresponding listing on mcp.so to avoid confusion and broken expectations.
