Here are some suggestions for the fix, hope this could help you to get some ideas for the resolution:
guard the GraphicsCaptureSession initialization path with an explicit check for E_OUTOFMEMORY (0x8007000e) and degrade gracefully i.e. by falling back to DXGI Desktop Duplication or a software capture path rather than calling abort().

If you're using WGC it will crash when you run Sunshine as a service. It's a known problem and why it's marked as a beta feature.
