Refactor and re-enable processing attempt acceptance tests - #5771

Update the tests to focus on the most recent processing attempt, making them compatible with SQL and PostgreSQL persistence which store fewer historical attempts than RavenDB. The specific attempt trimming logic for RavenDB has been moved to a dedicated persistence test.
